Fresh Noodles

Perhaps the most popular noodles in the world, fresh noodles come in a range of shapes and sizes, are enormously versatile--and ideal for a wide range of breakfast, lunch, and dinner dishes. Wok or other fryer-friendly, fresh noodles soak up, retain, and deliver the flavors of whatever they’re combined with. If boiled on their own, fresh noodles are better undercooked than over—simply because they are likely to be reheated and cooked again if you plan to stir-fry.

Fresh noodles enjoy a unique, honored place in the history of Chinese culture and cuisine. While rice was the day-to-day staple throughout China for thousands of years, noodles, the more expensive product, were served only on special occasions such as New Year’s Day or at family celebrations. Robert Yee always remembered how, in his youth, he looked forward to birthdays and weddings, anticipating on those days, not only the wonderful flavor of noodles and their sauces, but also the warmth and happiness shared by his family at these events. The simple pleasure of eating noodles with his loved ones symbolized everything he valued and held dear, and these memories fueled Yee’s drive to become an expert noodle maker himself.
